½ C Currants1
½ C Chicken Broth
2 T Butter
1½ C Couscous*
3 T Lemon
2 Pinches Cinnamon
6 T Olive Oil
½ C Diced Scallions or Green Onions
½ C Maisie Jane’s Tamari Almonds (Organic Sliced Almond Delights or the whole Tamari Almonds, chopped)
2 T Parsley
In a small bowl, cover currants with hot water. Let stand and plump for 15 min. Heat the chicken broth & butter to a boil. Stir in Coucous. Remove from heat & let stand covered for 10 min. Meanwhile, make dressing with lemon juice, cinnamon, & olive oil. When Coucous is done, transfer to a bowl & break up lumps with fork. Drain currants & add to Coucous. Stir in remaining ingredients. Serve warm or cold. *Quinoa may be substituted for Couscous
